Alfalfa is an excellent forage crop and the most widely cultivated legume forage crop in China. Carotenoids are a class of natural fat-soluble pigments widely found in nature. They play an important role in plant photosynthesis, hormone synthesis, and color determination. They also have various biological functions, such as antioxidant, anti-tumor, immune enhancement, and visual protection. However, the molecular regulatory mechanism of carotenoid synthesis is still unclear.
